Vanilla Cardamom Ice Cream
4 egg yolks
2 cups half and half
1/2 cup sugar
1 tsp vanilla
5 green cardamom pods, cracked
Whisk yolks and sugar until lemon coloured. Add vanilla and mix in. In a sauce pan scald the half and half and cardamom. Temper the egg yolks with this hot milk. Do this by adding a little at a time while whisking the egg yolks. Eventually you will have added all the milk. Cook this mixture in a double boiler until thickened. Cool, strain, churn.
Oh Sarah, violets in your garden and now this cardamom ice-cream ! I love cardamom too, in my turkish coffee usually! Sounds wonderful in the ice-cream! Tell me are the violets edible?

ReplyDeleteI like to heat some of the milk in the microwave, add the yolks and heat just a touch, then stir in more milk before chilling the ice cream mix. I don't know what cardamom tastes like, but I do love some homemade ice cream!

ReplyDeleteOne of my favorite recipes is a blood orange tart with cardamom custard... making it into icecream sounds too perfect!
I tried some of this in a little shop in Marin County, CA last week. SO good! They also had Vanilla Lavendar. Divine!
