Granola Cookies

I have been craving something sweet.  This is a simple recipe but is delicious and will fit the bill.  This is an old recipe, one that I used when I was teaching high school home economics in 1975. 

I used what was in my kitchen.  Rather than peanuts, I had some walnuts.  I used my homemade granola so it was already very rich with nuts and fruits.  I threw in some more raisins and I had a partial package of white chocolate chips.

p.s.  you can tell this is from 1975 by the size of the cookies...drop by teaspoonfuls!  Can you imagine!  Now we select the size of ice cream scoop we will use!

Granola Cookies

1 3/4 cups granola
1 1/2 cups flour
1 cup soft butter
3/4 cup sugar
3/4 cup brown sugar
1 tsp baking soda
1 tsp salt
1 egg
1 cup raisins
1/2 cup peanuts (unsalted)

Sift dry ingredients together.  Cream butter with sugars.  Add egg and beat until foamy.  Add dry ingredients into mixture.  Mix.  Add raisins and peanuts.  Drop by heaping teaspoonfuls about 2" apart on a greased cookie sheet.  Bake 12-15 minutes at 375F.

  4. I've noticed that everything is bigger! No wonder the world is chunkier. One of these days I'm going to try making my own granola, then on to these cookies! Conquering the world, one recipe at a time, I guess.

  5. MMM! The problem with these cookies is that it is very hard to stop at just one or two~ love that granola.

  8. These cookies sound delicious Sarah! Like a fancy oatmeal cookie. Yum! I can't imagine trying to scoop out teaspoon size cookies, it would take all day! However if they made a scoop that small I might try it :) Great recipe!

  11. Sarah>that is so funny you said that. I discovered that plates have grown 2" in the last 200 years... they used to be so small. Now everything is supersized...especially us! Here's to enjoying less more! Lovely cookie recipe, and I'm with Mags... what was life without silpat!

  13. Sarah, this is a really good recipe for something sweet but, still has ingredients that are wholesome and good for you.
    I could easily eat a few with a good cup of coffee on my way to work. Nice.
