I just love making meringues and pavlovas. This is a simple dessert that is calorie friendly. I used some of the Apple Quintessence that I purchased at Flavours of the World with the strawberries. Just a quick note - remember this rule for best volume 'eggs should be at room temperature and cream should be as cold as possible'.
Meringues
4 large egg whites
1/4 t cream of tartar
1 c superfine sugar
1/2 t vanilla
Beat the egg whites until soft peaks form. Add the cream of tartar and gradually add the sugar as you continue to beat to hard peak stage. Add vanilla just before finishing.
Mound on parchment lined baking sheets and make an indentation in the middle with a spoon. Bake at 200F for 1 1/2 - 2 hours. Bake until firm and dry but not browned. Turn off the oven and let them sit over night.
Fill with any fruit of your choice.

ReplyDeleteDoesn't she have the grumpiest look on her face, Pam! Actually she wears it quite willingly. I was surprised. Last night, I left it on all night. She never tries to wriggle out. She just has that grumpy look about her!

ReplyDeleteOh, Miss Sugar is adorable. But it seems like her sweater should be pink! I make meringue kisses for my dearly beloved all the time; he thinks he's one lucky guy. Imagine if I did it this way and gave him strawberries!!

Yes, JJ, it is Chinese New Year! I wonder why no one else thought of that! Everything on Foodgawker and Tastespotting is focusing on Valentine's Day. I should have stopped for Chinese food when I was in town for church today. I have a chicken in the oven with root veggies.
