Country Pork Chops and Baby Potatoes

I have some pork chops that are just not tender enough.  As a result, I avoid cooking them.  But today is the day that I will deal with these chops!

I have decided, since it is a hot day and I don't want the oven on for a long time, that I will prepare them in the pressure cooker.  My non-recipe goes like this...

Saute chops and set aside.  When chops are all browned, add some mushroom stock, pomegranate molasses, cumin, a dash of Worcestershire sauce, star anise and ground black pepper.

Cook under pressure for 10 minutes.

Meanwhile, steam some baby potatoes.

Saute the baby potatoes with pork chops and some of the liquid from the pot.  Add a splash of whole cream and heat.  Serve immediately.

  3. I've never used a pressure cooker, but I just last week bought a brand new one at a second hand shop. Need to initiate it soon! Love your pork chop dish.
